Savoury chickpea pancakes
Vegetarian - Serves 4
130 grams of chickpea flour
200ml of water
2 tbsp olive oil
A dash of sea salt
1/4 tsp of ground cumin
Whisk the chickpea flour, water, olive oil and salt in a bowl until smooth. Leave for 30 minutes, until the flour has absorbed all the water
Heat a frying pan and add a splash of oil
Pour the mixture into the pan and swirl to coat the bottom of the pan. Cook until the edges are starting to brown. Flip carefully to fully cook the underside
Serve with sliced avocado, houmous or your favourite savoury accompaniment.
